§ 10-296. Sanitation of premises; cleaning.

(a)
Every operator of an eating place shall keep the establishment and all substances used in the establishment for food or drink in a clean and sanitary condition, free from dirt, dust and insects; and its premises shall be kept neat, clean and free of litter and rubbish.
(b)
Cleaning operations shall be conducted in such a manner as to minimize contamination of food and food contact surfaces.
